The agricultural production value represents 16% of gross internal production and the primary sector workers amount to around 20-25% of active population, having also reduced of around half million, representing so an exception between the Countries Third Mediterraneans that, on the contrary, have seen or to increase or to maintain unchanged the demografic pressure on the agriculture. The annual middle rate of growth in the last decade of the food production has been equal to 5-6%; nevertheless, the agricultural-alimentary commercial balance has remained strongly debit. In practice, the Algerian agriculture satisfies only half of the Country food requirement and shows a strong unbalance of the agricultural-alimentary balance; this appears serious for a Country in which 50% of per head income is destined to feeding and that in the seventies it drew a main point source of currency from the export of agricultural products (equal to half oil products). In short, it need to complete the liberalization process of the sector, to extend the irrigated surface, to make cultivable other inside territories, to increase the struggle to the desert grounds and to intensify the economic cooperation, technique and financial with European Union Countries that, in turn, would commit a serious error of political and economic myopia if they underestimated the importance that also assumes for them (terrorism, wild immigration, etc.) the development of the Countries Third Mediterraneans and, between these, that of Algeria. In fact, in the scenery of the accords stipulated in the Euromediterranean Conference of Barcellona in the November 1995, finalized to the constitution of a free exchange zone between the European Union and twelve Countries Third Mediterraneans within 2010, the European Committee has introduced, in 1996, a project for an accord of association with Algeria whose negotiations have started in the March 1997. The paper outlines the structural change in proteinuos food consumption within a model satisfying acceptable definitions of flexibility and the restrictions of utility maximisation. We develop this approach in order to explain by demand side variables the finding of structural change in demand such as the shift in proteinous foods in the beginning of 90s derived by the price liberalisation. In particular, we attempt to verify the extent to which single solution depends upon organisational structures, innovative processes and market strategies. To do this, in the first part of the paper, the main elements of the vertical integration and its causes are presented and discussed, with particular attention to the implications for the agro-food system. A theoretical grid is used to interpret, in the second part of the paper, the behaviour of firms. The study has been carried out by means of a survey. A questionnaire was given to a sample of firms operating in the food industries of the region Marche in the sectors of processing pork and poultry meat as well as in wine production. The results show in recent years a growing concern in all of the cases considered on contractual relationships with the suppliers of raw materials, mainly farms. Although these results highlight different solutions across different industries and across the firms of the same industry, in all the cases they show as vertical coordination tends to represent a reference scheme for the management of quality at various stages of the supply chain. In particular, the paper shows that the growing emphasis of consumers on quality and food safety has led to the development of marketing relationships with suppliers of agricultural products. Such a relationship, built with "selected" groups of suppliers, relies mainly on trust and incentives the growth of cooperative solutions which allow to reduce the cost of transactions. Furthermore, such a cooperative solution enables the firms to adjust their offering to changing market environment and to develop competetive strategies based on higher quality and other quality characteristics perceived. When Italian goat-ewe?s milk cheeses arrive on the market, they are left to themselves and their prices fall. Industrial products, on the other hand, have the advantage of sales promotion and their prices rise. For this reason a structural change of the economy should be necessary which, by inducing a shifting of workers among the sectors and reducing the agricultural component of the whole population, will allow to stabilise the domestic demand. Above all for the high rate of population growth the margins for the expansion of the agrifood production are wide. But from this point of view the problems that the system has to face are those relating with the inefficiency of the irrigation system and with the competition exerted by the European productions. In fact, even though the domestic production - especially the horticultural and fruit crops - may still show significant competitive advantages, due to the low cost of labour and to the time of marketing in advance with respect to the productions of the European countries, it still have some gaps to fill up concerning the marketing system and the post-harvest, freezing and transportation technologies. Given that the agriculture still represents the main sector of the economy, then it should be this sector to be favoured in order to feed the structural change which, basing itself on the introduction of technological progress, also favoured by the capital accumulation within the agriculture, allows the permanence of a surplus of labour and the appearance of a surplus of food that stimulate the economic development. Obviously in order that it might come true will depend on how Morocco will decide to extract, transfer and utilise the surplus. In order to reach the most advanced stages of food society, the agricultural sector has to continue to introduce innovations that lead to an increase of the factors productivity, which have already been adopted in the last decades. While total consumption has been falling there has been a continuos rise in the demand for high quality product. The paper analyses the price-quality relationships in the market for the Italian high quality wines, in order to better understand current strategies of product differentiation in the wine market. We estimated a regression model with price as dependent variable and a set of quality attributes and reputation indicators as independent variables. The empirical findings show that the higher prices are associated both with higher quality and reputation and that consumer perception of quality is affected by subjective rather than objective quality attributes. Besides different types of services (tourism, financial, etc.), the advent of the virtual market has also affected industrial, art craft and agricultural products, because of the interest shown by all types of economic agents, including those involved in the agro-food sector. This study focuses on the benefits wich e-commerce could bring to those who adopt it and on the constraints wich limit its functioning, as well as analysing the economic potential wich e-trade represents with specific regards to agro-food products and services, and more specifically to the food sub-system. It is for these reasons that we believe that the proposal of an International Observatory to help the local food products of the Mediterranean areas of the Ue would be useful.
