Abstract: Aceto Balsamico, sviluppo agroalimentare e territorio (di Fausto Cantarelli) - ABSTRACT: The valorization of the typical and traditional products meets difficulty for the lacked organization of the producers; therefore a useful method can be the use of the field plan, where all the producers are involved in several shapes of collective communication. The article introduces the experiment made in the field of the balsamic vinegars of Modena and Reggio Emilia, the traditional ones with high quality and small volume of supply and the not traditional ones with medium quality and big volume of supply. These last ones have developed a turnover of 400 billions per year, of which approximately the 80% in countries with advanced economy. The proposed solution previews to define the two provincial territories as "Acetaia d?Italia" in order to promote the vinegars also with the role of haulage of the other local typical products, that are numerous and with high-quality. In order to impose the brand it has been dedicated the year 2000 to the balsamic vinegars.

Title: Aceto e aceto balsamico tra antichit? e medioevo
Abstract: Aceto e aceto balsamico tra antichit? e medioevo (di Roberto Greci) - ABSTRACT: Roman and medieval ages both knew a wide (but quite different) use of the vinegard. In fact in the Roman age this food often was stirred and mitigated with aromatizing substances and honey, while the texts of medieval culinary art document a decided fondness (imposed by French) for clearly acid tastes, obtained with the resort to vinegard and still more to the verjuice. The full recovery and the development of the bitter-sweet taste will happen between XIV and XV century and will follow a route that from Mediterranean countries will set out for France and for Europe. In this turning point of the taste (documented in a border area such as the Piedmontese one) the vinegard was to play an important role. As for balsamic vinegard, we can say (on the base of insufficient sources) that such product was already to be known in Roman age and medieval age, that the privileged place of production was the territory of Modena and Reggio Emilia, that its insufficient diffusion was to depend on the prevalence for strong tastes (and therefore on the scarcity of the demand) and on the difficulties of transports.

Abstract: This study examines the today conditions of the Sicilian citrus crop sector and investigates the consumer preference structure. The citrus farming system is affected by a long-lasting disadvantage due to structure restrictions in addition to management limits. Some studies case have confirmed that farms are frequently based on a too small crop growing area and this is one of the stronger problems in order to achieve better efficiency. The analysis of consumers? preferences has been carried out with a two step approach based on direct telephone interviews and on a subsequent postal opinion poll. A good deal of information has been collected on style and motivation of fruit consumption pattern and on the characteristics that the citrus consumers regard as of highest significance. Consumers have clearly expressed the call for a superior information and certification service in order to protect the agreeable and healthy features of citrus fruits.

Abstract: Consumer's attitudes, vertical differentiation, and labelling regulation in the food industry new GM-products vs. traditional regional products (di Adele Coppola, Maria Teresa Gorgitano, Valeria Sodano, Fabio Verneau) - ABSTRACT: The paper discusses results of a simulated marked research evaluating consumer?s preferences toward GM and NGM food products in the South of Italy. Three experimental scenarios with different hypotheses of price ratio and product attributes of GM and NGM products were run. Consumers? choices were related to information and risk attitude. We find that consumers tend to prefer NGM products to GM products, without any statistical relationship with their information level and risk attitude. When the NGM product is compared with an enhanced GM product, most consumers still prefer NGM product. GM product consumption does rather depend on consumers? risk perception. The results demonstrate that there is room in the market for vertical differentiation policies based on the wholesomeness of traditional production methods.

Abstract: La fragolicoltura siciliana in ambiente protetto: aspetti economici delle recenti innovazioni dei processi produttivi (di Antonio Asciuto, Anna Maria Di Trapani, Emanuele Schimmenti) - ABSTRACT: The protected cultivation of both large fruit and small fruit strawberries in Sicily, mainly concentrated in western Sicily, has been recently characterized by an increasing use of product and process innovations, strengthening the leadership of this area in the context of Italian early strawberry cultivation. The aim of the paper is to improve the knowledge of Sicilian protected strawberry sector, with reference both to its territorial features and to farm management. The investigated area is the province of Trapani (and particularly in Marsala district) for the important role it plays in the regional strawberry sector, accounting for about 7% of the relative national area. A microeconomic analysis, the aim of which was mainly to determine profitability of large and small fruit strawberry cultivations by means of various economic indicators, was carried out on a sample of 22 farms, where the following crop typologies were sorted out: one-year and two-year under tunnel cultivations of both frigo and fresh large fruit strawberry plants, one-year and two-year glasshouse soilless cultivations of frigo small fruit strawberry plants. The cropping techniques generally adopted in the farm sample are characterized by high manual labour inputs, as most cropping operations are quite difficult to mechanize. In order to identify the labour constraints affecting the potential expansion of strawberry enterprises, the annual farm working requirements of the different cultivations were analysed, as well as their temporal distribution. Moreover, harvest calendars have been reconstructed, as their width and positioning in the farming year are strategically important in relation to farm management and, above all, to the marketing stage. Microeconomic analysis has borne evidence of considerable profitability levels with regard to the studied typologies of large and small fruit strawberries, despite the fact that their production costs are rather high; the latter are actually more than offset by high values of the Gross Saleable Product per unit of cultivated area.

Abstract: Alle origini di una vocazione alimentare: beccai e lardaroli nel mercato delle carni a Parma in et? moderna (di Claudio Bargelli) - ABSTRACT: The agricultural food vocation of the economy of Parma has ancient roots, whose rediscovery allows to go back to the origins of a particular "food culture" widely acknowledged by literary sources and by the collective psychology itself. A decisive role in the achievements of this branch of economy was carried out for centuries by the "Lardaroli" guild, sprung soon after the second half of the 15th century, from the butchers? guild, one of the most ancient "major guilds", the only one authorized until then to sell meat inside the town walls. The "Lardaria" guild owes its specifity to the nature of the foodstuffs - mostly originated in the Emilian area - derived from the processing of porc meat and the transformation of milk. As evidence of the acquired prestige, it is possible to mention that, since 1616, a kind of controlled origin certification was recognized to the Parmesan cheese coming from the dairies facing the city. These were the first isolated vanguards of a competitiveness that, even if temporarily repressed during the Napoleonic period and the Restoration, was able to arise successfully again during the second half of the 19th century. At that time it turned into the small but vital family business that, in accordance with a secular productive vocation, has reached the present status of the famous "Food Valley". One must, therefore, recognize the Parmesan "Lardaroli" merits in having laid the foundations of a specialized market, able to select high quality foodstuffs and satisfy the expectations of an exacting and faithful demand.
