In Italy one of the central problem is to estimate the convenience of agriculture to produce GMOs and above all to understand if the GMOs can be compatible with the characteristics and the requirements of development of the Italian agriculture. In consideration of that, the problem of the employment of the OGM from part of the Italian agriculture is analyzed in reference to the following aspects: the productive characteristics of Italian agricultural and food-system; territorial characteristics of the Italian agriculture; the expectations of the society and, in particular, of the consumers regard to the role of agriculture in the society; the presence of GMOs on the market; the role of the research; the protection of the consumer; the evolution of the communitarian and national legislation. That be stating and considering that it does not exist taste without culture and cognition, being an attitude connected to the art, to the pleasure, to the history, to the well-being and then to human life, we can define this tourist district like "the earth of the taste". Abstract: The globalization of the markets determines also for our Country the necessity to operate choices of extreme importance for the sustainable development of agriculture. In particular, will it be winning the choice linked with the technological innovation or, on the contrary, that one anchored to the typical productions of the territory? In the first case farmers will be able to compete on the world-wide market on the base of a production of elevated quality, in order to obtain which, the consumer is disposed to pay something more. In the second case our productions will be forced to compete with the other ones, on the base of low production costs, confronting not only with those ones characterized by the presence of foreign genetic material (transgenic material), but also with those ones, which come from Countries with lower production?s factors costs, from Countries that have no limitations in the use of chemicals, such as tans or pesticides or growth hormones, and from Countries where the jvenile job is not protected or, really, is stimulated and/or exploited. Today in the district of Langhirano there are two lines of production: the first is that one of the Dop ham branded Parma, with 9 millions of pieces per year, and the other one, that refers to imported and smaller hams, which are then exported, after seasonig, at very lower prices to make easier their sale on foreign markets. The ham?s market trend is favourable all over Europe, so the perspectives for those countries, that produce salted and seasoned ham, the Mediterranean countries, such as Spain, which is the first producer with 30 millions of pieces, and Italy, the second, with 28 millions of pieces, are very good. Surely the licence constitutes an incentive to the scientific search, but when it cares plants or animals used in agriculture, it?s necessary to hold account of the fact that: the opportunity of being able to patent transgenic plants and animals, will mean to be able to exercise on them a right of exclusive property; the licence will increase the economic dependency of the agricultural field in comparison with manufacturer one; the licence will be able to determine the payment of royalties for every kilogram of sold seed and for every kilogram of product obtained from that seed; the licence will favour the production on the base of a contractual relationship with farmers; the licence will allow the Countries, that have its property, to carry out the cultivations in localities that are next to the placement markets, rendering therefore competitive productions that currently are penalised by elevate commercialization costs. A front of this strong growth, the course of consumption is still confined in a niche?s dimension. Actually, the most important problems about organic products consist in the high level of prices and the confusion that characterizes the legal aspects and in particular the process of the certification. To promote the organic products is indispensable for the governments authorities to identify the product in a clear and unambiguous way, and to reach an agreement, with the organic farmers, in order to realize advertising campaigns.
