It consists of the total of technical and transaction operations needed to obtain a finished product from some given raw material. Since then, the application of the concept has expanded in many research fields and particularly in the agro-food system. Within an agro-food framework system, the approach of "fili?re" shared the same analytical objectives of the concept of agribusiness, which was developed in the United States in the mid-fifties by John H. Davis and Ray A. Golberg. In fact, the latest concept applies to that part of national economy involved in the flow of food product and services from the point of initial agricultural production until they reach the consumer. Over the past two decades, the concept of "fili?re" met a growing interest among Italian agricultural economists at both theoretical and applied ground. Within the literature the concept of agro-food "fili?re" progressively evolved from a simple analytical tool particularly appropriate to overcome the limitations of more traditional analysis carried out at sector level to a form of supply organization called to compete on the market as a business system. In such a perspective, strategies for enhancing the product and improving the performance of the industry imply an increasing attention in terms of analysis, not only in how the different firms which operate within a "fili?re" framework use strategic resources at their disposal, but also the possible synergies and interchange of resources and skills that take place among them. When considering the concept of "fili?re" as a form of supply organization it needs to be considered that over the last two decades new theoretical and conceptual approaches were developed to study the organizational forms of the supply system such as supply chain, supply network and value constellation. Differently from the concept of "fili?re", which considers as a starting point the product and its production processes, focusing on the upstream-downstream exchanges processes, within a supply chain approach it is the ultimate customer that activates and "pulls" processes along the supply chain. In the light of these considerations, the aim of this paper is to draw attention to the strategic business analysis methodologies that were developed by economic literature and to verify the possibility of their application to the analysis of the problems associated with the use of agro-food "fili?re". In particular, the discussion will be conducted with reference to the concepts of value chain and value system developed by Michael Porter (1985). The work, therefore, defines and develops, first, the concept of "fili?re", with reference to its application to food context. Then, it passes to analyse the major theoretical and conceptual tools that focus attention on value creating system for the customer/consumer, highlighting, in particular, the importance of issues such as the centrality of the customer/consumer and the necessity to fulfill its request. This paper would offer a methodological/ applicative framework for a food chain?s analysis in order to evaluate its internal functioning and connection mechanisms and to identify some strategic actions aimed at stimulating the product competitiveness and the chain?s performances based on the pointing out of its competitive advantage. The value chain analysis permits to represent the total interrelated activities managed by a firm and the competitive advantage could be reached optimising the several connections? linkages. Analysing the available data and information the Authors choose the case study along the Northern Adriatic coast, more precisely referred to the Chioggia seaport (Veneto region). The main objective of the study is to complete a global evaluation of the bluefish chain surveying its functioning mechanisms and defining its competitive advantages useful as milestones for the valorization of the product. This result permits a strengthening of the chain on the whole. Concerning the methodology every step of the chain has been examined following a "from sea to fork" approach including all the physical flows of the product but also considering the involved trade intermediaries and the other figures participating to this process, the logistical aspects and the information movements. The bluefish value chain has been represented through descriptive maps containing the Chioggia bluefish flows from a physical point of view and those of the information related to this product, according to the Cardiff Business School publications. First the paper discusses the concept of agrifood chain and then describes the bluefish context in the Chioggia seaport through the catches and technical characteristics of the sector. Then the Chioggia bluefish chain has been divided in some phases and it has been deeply analyzed looking for its competitive advantage or disadvantages. The final step of the work was aimed at gather the bluefish value chain from the construction of maps representing the different flows of products and information with their timing details. This work is aimed at revealing consumer perception of some attributes related to a particular fish group called "blue-fish". Survey?s target has been chosen observing some critical commercial issues related to this products, which is affordable and has a good nutritional and dietetic value, but it does not gain the expected market success. Contemporaneously, the blue-fish is the first group of seafood caught in Mediterranean Sea, representing one of the most important economic resource for Italian fishery sector and an element of territorial distinction. Especially, the research evaluates how consumers perceives the different blue-fish products and their competitors in the fish market, investigating both positive and negative nutritional, commercial and sensorial attributes. Through the correspondence analysis, it has been possible to create a perceptual map synthesizing the complexity of qualitative factors that explain the purchase/not purchase event of the different type of blue-fish products and to compare them with their main competitors. The choice of this analysis is due to the lack of information in the literature about conditions and motivations of blue-fish consumers/nonconsumers, so, the research has mostly explorative purposes and it may offer useful information for further studies. Starting from this basic consideration and the opportunities afforded by Council Regulation (ec) No 104/2000, the objective of the paper is to analyze the problems of the sector and the possibilities of certain solutions according the reform of the Common Organisation of the markets in fishery and aquaculture products. In particular, the purpose of the reform was to develop the role of Producer Organisations (pos) with the aim of making markets more competitive and strengthen their bargaining power with the rest of the marketing chain. However, to date, the role of pos at national level remains little studied and evaluated, although it takes a major importance in view of the revision of the Common Fisheries Policy. The paper analyzes the pos currently operating in Italy, the relations in "a horizontal line" for the constitution of associations of pos and in "a vertical line" with the downstream operators. In parallel, the theory of neo-institutional approach is the "toolbox" approach in order to carry out the analysis on the capacity of pos to implement measures to encourage the planning of production and adaptation to demand, both from terms of quantity and quality, as required by eu regulation. Therefore, the contraction of the National supply is balanced by the imports which, in terms of value in the reference period tested in the current study (2003/04-2007/08) have grown, causing a further burdening in the absolute value of the Italian trade balance. The outlined background is made further worse by the slowdown, in few years, in the rise in the fishery products consumptions, due to the reduction in the purchasing power of the families and to the competition of the import products. The study, after analysing the structure and the trend of the import-export trade of the main Italian fishery products, quantifies Italy?s competitive advantage in the business with the chief trade partners with the aim to put forward possible intervention strategies oriented to improve Italy?s competitive performances on the international market. The analysis shows how just for some products it is possible to expect a market rise and, in particular, for the fishery resources that our seas are plenty of. The products with a high trade value as shrimps, cuttlefish, squids and red tunas, since they are overexploited resources, can be, only within certain limits, object of strategies of penetration in the market. For other products instead, as sardines, it?s possible to formulate some intervention strategies oriented to a higher sensitization of the consumers about the nutritional proprieties of the sardines, anchovies etc., and of the local catch in particular, helping, indirectly, to reduce the foreign supplies. The first objective of this research was to understand the target species of interest for a sustainable valorization strategy of fish products. The target species are those of low commercial value which are fished locally during the whole year and can be consumed both as fresh fish and as transformed fish products. The choice of these fish species was based on the unsustainable fish catches and on the local historical assets of the traditional methods of fishing and of the conservation techniques. In particular, we focus our attention on the fish known as "poor fish", which has a lower commercial attraction compared to the well known fish species. This work is articulated in several different steps: the description of the type of species chosen, the analysis of fish consumer demand and the added value that comes from local identity and from the culture of production and consumption. The outcome of these results form the base to define the valorization strategies to adopt. This research was conducted in the Lazio region. After a preliminary analysis of Lazio?s fish export towards eu 27, compared to exports of other Italian regions towards the eu 27, the Lazio region did not show a competitive advantage in this sector. Even if it is not competitive in terms of fish export, this region showed some productive characteristics that can be extended to several other cases. In fact, it has a productive tradition of fishing but it is only marginal fishing in terms of quantity and quality of the local fish species. The empirical analysis conducted on local consumers showed a local fish culture on a consumption that, together with fishing methods, local fish consumption and production characteristics, suggested a valorization strategy based on the territorial identity factors. The aim of this study is the definition of an integrated development plan (idp) for the fishing sector of the area conducted through an interdisciplinary research. The idp, through specific analysis and with the involvement of local stakeholders, identifies possible lines of action in view of public funding sources provided at the regional level, particularly those related to eu Structural Funds. The idp includes different measures and interventions for structures and services, promoting a first integration process of the territorial interests and creating a synergy between public and private actors. In the same time in Italy a increasing of costs (expecially fuel) and a reduction of market prices, because of the increasing of imports, are observed. Although a big part of Italian fishing fleet is to be referred to Apulia region, this dynamics are worsen, here, also because of market inefficiency and lack of integration and cooperation among fishermen. In this work two areas that are relevant for regional fishery have been investigated. On a first step have been evaluated fish amount for each kind of dealer working in each one of the two areas than, according to Porter?s value chain analysis theory. Than the approach of value system has been applied to evaluate the value chains of the firm?s supplier, the firm of fishery itself, and the firms distribution channels. Distribution of value has been resulted different but very unfavorable to fisherman in both investigated areas. The second step of study evaluated social capital value in both areas, defining the networks of fishery consistence and number of their mutual relationship. Results lay stress on a relation to an higher social capital value and a distribution of value system more profitable for fishermen. We have defined a theoretical paradigm of optimal value portfolio (ovp) which considers - in a new light - multifunctional agricultural farms as an ensemble of governance structures optimizing the creation of value. The need to validate the ovp functionality has led us to identify a new methodological approach referred to as the Value Portfolio and Multifunctional Governance Analysis (vpmga). This analysis embeds value chain analysis and governance value analysis and at the same time attempts to overcome the "sectoral" limits representing also a new and further development. We deem, in fact, that the vpmga best responds to the specificities of multifunctional agricultural farms. Through the vpmga we have identified four determining family variables which are internal and external to the farm (internal resources, market, territory, policies). We have also assessed the functional links with the boundary shift processes and the mechanisms governing transactions and the creation of an optimal value portfolio. We have validated this approach empirically on selected specific agri-food chain. From the findings we have defined various ideal types of farms that allowed us to make future scientific assumptions and highlight normative implications for improving managerial decision-making processes based on the vpmga model. The aim is to indagate whether process attributes are considered relevant by European consumers. Differences of preferences across subpopulations, among northern and mediterranean European countries, are also tested. The study?s background includes consumers? concern of both farm animal welfare and environmental impact of livestock production. A self-administered structured electronic survey was developed to investigate product and process attributes of pork meat. It was completed by a sample of 2,437 representative individuals from five European countries. Each respondent made 14 choices, rank-ordering 15 pig production profiles in terms of their individual preference. The choice was organized around a fractional factorial main effect orthogonal design. Each profile consists of five different attributes, including product?s and process?s ones: stocking density and floor type process attributes have been included as proxies of animal welfare production characteristics; impact on soil, air and water were included to underline environmental related process attributes; fat contents and chain type/product were used to include in the choice set also traditional product attributes. A generalization of conditional logit model for ranked outcomes was implemented, accounting for heterogeneity and correlation among the respondent?s choices. Our analysis highlights the fundamental strategic role played by the process attributes considered. Such an influence in choices, however, does not seem connected to psychographic or particular lifestyle variables. This might suggest that a floor type more conducive to animal welfare and considerable effort made by the farm to limit environmental impact both represent for consumers indirect indicators of food health and safety. In addition, for a mature product, as is pork in current European consumption models, to focus on intrinsic attributes such as fat quantity and quality would not appear efficient. This is confirmed by the result obtained for the ?obese? segment, for whom fat quality is unimportant in their choice to purchase pork. These strategies should be capable to respond to the new needs of consumers through the integration of environmental, social and territorial aspects of quality. In this regard the current work, focusing on the case of water buffalo meat, performs an analysis of the supply chain of water buffalo meat in Campania, and presents a critical review of the promotional and communication activities implemented since now, both by public and private entities, trying to understand success factors and development limits. Subsequently, through deep interviews to producers and retailers further details have been collected and evaluated. Moreover, a survey on 180 consumers residents in the Provinces of Naples, Avellino and Benevento, responsible of food shopping, has been performed with the aim of obtaining useful information to implement effective marketing strategies. Data were subjected to exploratory analysis, to provide a generic profile of the water buffalo meat consumer, and subsequently to cluster analysis to create homogeneous groups of consumers and identify the segments most interested to the product. Three different clusters were recognized: the first cluster (60% of respondents), was characterized by consumers that have never tried the product and are also completely uninformed on its properties and characteristics; the second cluster (14% of respondents) includes aware consumers, i.e. those who show a greater knowledge of the product and a higher frequency of consumption; the third cluster (26% of respondents) groups the occasional users, i.e. those who bought water buffalo meat only once or very sporadically and who define themselves as poorly informed on the product. Results highlight the need to activate effective communication strategies to foster the perception of the actual quality of the product, emphasizing its nutritional properties and health benefits in order to retain the occasional consumers and promoting its sensory characteristics to attract new consumers. The compliance to its requirements represent today a critical step for the Italian farms, particularly those involved in the livestock business sector which suffers also the burden of a worrying market crisis. Difficulties for the farms involve economic and technical aspects. First are linked to the added costs deriving from the respect of the rules in terms of nitrogen burden per area and the sewages disposal. The technical problems are mainly represented by the new classification of the areas in vulnerable (vzs) and non vulnerable zones (nvzs). This facts have represented an important obstacle for farms? management, particularly if they are located in vzs because it has became necessary find new solutions to spread the farm sewages. The paper offers an empirical analysis aimed at trying to optimize the compliance procedures to this directive for a livestock farm, trough the predisposition of an economic account for two typical chains: the red (bovine) and pork meat production. The calculation comprehends all the phases from the meat production to the sewages handling and management after a denitrification and the nitrogen storage. The evaluation consider different alternative systems. Through this process it could be possible obtain the commutation of the bovine and swine sewages, representing an expensive burden, in a new resource for the farm. This fact permits to achieve also an environmental result in terms of a pollution restraint and an economic advantage as raw material for energetic transformation. Finally the Authors complete the paper with some reflections. However, the success on the market changes dramatically among firms, production areas, types of wine, etc. The paper presents main features of Italian wine market with special attention to strategies adopted by firms along the wine supply chain, the enforcement of Vqprd wine system, the impact of promotion strategies on international wine market. The methodology for wine market analysis has been firstly figured out. The market theory about monopolistic competition or oligopoly power cannot fully explain the dynamic of wine sector over time as well as the features and behavior of wine firms. Thus, approaches based on strategic groups or Porter?s cluster competitiveness seem to fit better what has happed in wine sector. The role of wine sector goes beyond the market involving a strategic role on the territory, especially in marginal areas, on the environment (e.g. landscape), on the tourism (e.g. enotourism). Peculiarities of Italian wine market have also emphasized at both supply and demand side showing factors which driving and affecting the features of wine firms. This analysis has figured out a quick response of wine companies to consumer preference changes at both national and international level. Market trends such as the increasing in Vqprd wines, the shift from draft to bottled wines or the strong increase in price differentiation and quality have been boosted by the innovation processes in grape production, wine making, supply chain arrangements and marketing activities about product (e.g. packaging), communication and distribution channels. Further the strategic analysis has been focused on two key aspects: the role played by Consortia in reinforcing the reputation of collective brands such as docg/doc wines and the effect of wine promotion in extra ue countries. Recently, the role of Consortia has been reviewed. The institutional task about controls over grape and wine production has been shifted to private and independent agencies while new arrangements have been set up. Among them the control over supply and policy actions at consumer level. Other traditional activities such as the protection of collective brands on international markets and the promotion have been reinforced, especially on Consortia involving a high share of producers, since financial support is now afforded by all producers regardless their membership to the Consortium. However, only a few Consortia are able to carry out these activities since many of them have a low representativeness. The case of Prosecco Consortium is then presented showing the effect of the reform of denomination of origin which has restricted the use of Prosecco to docg/doc areas only. Finally, the Italian promotion activities on third countries, financed by the wine cmo, have been outlined. Results suggest an high attention towards north American countries while promotion in Eastern countries has increased in the last year. The aim is to identify the possible strategic options for the valorization of Appellations of Origin on the final market. We first provide a descriptive analysis of the wine bottling stage, by distinguishing bottlers according to the types of vertical relationship with upstream production and processing stages. Afterwards, we describe bottlers? structural characteristics and strategic decisions concerning product range and procurement strategies. Then, a cluster analysis is conducted, in order to identify typologies of bottlers, according to structural and organizational characteristics and strategic decision. It requires companies to define strategies to maintain and improve their results over time. Surveys conducted in Europe on farms strategies showed that diversification of assets and income is an alternative strategy to business modernization based on enlargement of scale and/or intensification of production. This is the case of agritourism enterprises that combine the production of agricultural goods with some services like catering, hospitality, recreation, education, etc. These enterprises are the most widespread form of multifunctional agriculture. Agenda 2000 has recognized the existence of a European model of agriculture based on multifunctionality and the central role of rural areas in the diversification of farmers? economic activities. Agritourism enterprises are part of rural tourism, which is an answer to the demand of enogastronomic, cultural, environmental, social goods which are specific components of local areas. The attractiveness of these areas depends on the possibility to strengthen and enhance existing relationships between the different actors of those systems (non only farms), also through public investment. The definition of rural development policies and instruments needs to measure the dimensions of multifunctionality (economic, social and environmental functions) and to decline it within specific local contexts. This study would represent a methodological contribution to analysis that combine sector and spatial elements, aimed to provide useful information to the regionalization of public expenditures. The process here implemented - choice of information sources and functional indicators, construction of datasets, use of clustering algorithm, with particular reference to the fuzzy one - provided a description of agri(eno)touristic characterization of the region Friuli Venezia Giulia (study area). The municipalities (statistical units) were grouped into five different clusters in function of the number of wine companies, the number of agritourism enterprises and the services offered to their customers. Moreover, fuzzy clustering allowed to identify those municipalities that have the properties of different clusters. They were regarded as "in transition", meaning that they can be moved the desired group through specific projects. From an operational point of view this information is important because enables to elaborate development programs taking into account both differences between clusters and some peculiar characteristic inside each group. The causes of this structural and organizational changes are related to different phenomena, whose weight varies greatly depending on the chain. However, the underlying driving forces may be due to at least three factors: a) those related to changing consumption and therefore demand for food and agricultural products; b) those related to the organization of the markets upstream and downstream supply the same products; c) those related to the organization of the markets upstream and downstream of the agricultural sector. Often, the common feature in many food chains lies in the role played by farmers or, in general, the agricultural sector, capable of reacting passively to stress imposed by other sectors of the economy without being proactive. And this is something that causes a loss of competitiveness of this stage of the process, frequently unable to innovate and to lay down rules according to what should be his "natural force" against an organization of chain which is the engine: an agricultural world incapable, that is, to be the protagonist in exchange relations, important for survival in a market economy. Therefore, the aim of this work is the search for mechanisms that can provide value to the production phase to push on bitter increases competitiveness of the sector. In reaching this result was useful from the pipeline concept as developed agrarian economy to analyze how this has been the subject of theoretical developments and how these developments have come to define, through the actions of the agricultural policy - particularly in relation to the development of Integrated Projects of Food Chain introduced by the Rural Development Program 2007-2013 of the Regions - a model basically in line with what happens in practice. For the first time, in fact, discussing food chains having as reference a recognized legal entity, formed to develop projects and develop the Integrated Projects of food Chain. The objective of this research work has been pursued with particular reference to a sector - agriculture - and to a food chain - wine - in a given territory - the Apulia region - is evolving proving, partly as a result of actions of agricultural policy at Community, national and regional level, significant levels of economic growth and development. About the methodology, using the administration of questionnaires to sample the three companies participating in food chain partnerships that have proposed a draft of integrated design of food chain in response to the notice of the Apulia Region for the submission of the Integrated Projects of food Chain, it was possible to define characteristics and develop the swot analysis of Apulian wine food chain and, consequently, identify the mechanisms that regulate the relations of the food chain and with the help of network analysis, to assess the weight of relations between individuals of the same. The sample take into account includes the wines that Lazio (a region located in the center of Italy) has presented at Vinitaly in 2007. This sample can be considered representatives of the most important regional firms active in the market wine. As knows, the theoretical framework of the hedonic price method consider that in a differentiated market the consumer utility is generate not only from the consume but also from other benefits connected to the specific quality attributes. The final price is the sum of the implicit prices paid for every these attributes. In case of wine, they can be extrinsic (vintage, colour, grapes, region of origin, presence of pdo or pgi mark, brand name, etc.) or intrinsic (sensorial characteristics, special taste, etc.). In the first case, the evaluation is made using the information available in the wine labels while in the second case it is impossible to made an evaluation before the purchase and consumption. In many cases wine consumers do not have sufficient practice to evaluate this kind of quality and, as a consequence, an important source of information is represented by the wine guides that contain judgment of experts and quality ratings. Starting from a sample of 294 wine labels, the hedonic price function has been estimated using E-Views software (ols method) and making a regression between prices and extrinsic and intrinsic characteristics of wines. The functional form used is the log-linear form. The results put on evidence that red wines have a premium price (+16%) with respect to the white wines and that there is not any influence from the mark policies. Small firms have a premium price (+18%) with respect to big firms. The judgment of experts has a positive correlation to the price: the value of premium price increases when the quality rating increases. No correlation has been found between the presence of pdo/pgi marks and this suggests that in this case the presence of denomination of origin is not associated with quality and do not obtain a premium price. Considering the region of origin, the estimation highlights a premium price for wines produced in Ciociaria, that is a small area in the south of the region that produces a relative small quantity of wines. However, especially for Venice lagoon, health and environmental risks should be evaluated. A multidisciplinary approach was used. In particular, local production chain analysis and end-user requirements were investigated to assess manila clam safety and traceability in Northern Adriatic Sea. Moreover, the molecular and biochemical techniques demonstrated a good quality of the investigated farming sites, due to the absence of biotoxins. Molecular markers provided informations on the population genetics and specific genetic traits of Ruditapes philippinarum in Northern Adriatic Sea, which was investigated for the first time. The complexity of all these informations was simplified in a single useful tool: a database containing all the informations about the seafood product.
