In quest?ottica, percio, la multifunzionalita permette all?azienda di rispondere alle nuove istanze sociali, consapevoli e responsabili, produrre benessere collettivo, integrare il reddito, individuare percorsi di creazione di valore socialmente responsabile. In questo senso, si rinnova la tradizionale visione della multifunzionalita, la quale da strumento di giustificazione dell?intervento pubblico in agricoltura assume valore di vero e proprio fattore strategico di vantaggio competitivo. Il paper propone un modello teorico che consente di analizzare come i processi di boundary shift portino alla creazione di un "portafoglio di valori" (PV) (Marotta, Nazzaro, 2010; 2011a, 2011b), e a nuovi modelli di impresa agricola multifunzionale e multi-valore. Sul piano metodologico, l?utilizzo della Value Portfolio and Multifunctional Governance Analysis (VPMGA) (Marotta, Nazzaro, 2010; 2011a, 2011b), ha permesso di validare empiricamente il modello del PV, in specifiche filiere agroalimentari e sistemi rurali della Campania, secondo un approccio che, integrando e completando la value chain analysis e la governance value analysis, si pone come innovativo e meglio rappresentativo delle specificita dell?impresa agricola multifunzionale. I risultati hanno permesso di verificare come il boundary shift e, quindi, il PV, consentono di diversificare il rischio, in situazioni di crisi, rappresentando una strategia competitiva per le imprese multifunzionali rispetto alle imprese che conservano il solo core business tradizionale. To this extent, the Mercati di Campagna Amica (MCAs) farmers? markets have generated a widespread expectation of saving among costumers, representing one of the most popular Italian experiences in this regard. With the purpose to shed light on the dynamics underlying this phenomenon, the article pretends to verify the degree of actual saving for consumers living in the western outskirts of Rome by comparing the prices recorded in 5 outlets located in the same area with those of a MCA. The analysis on the prices of 34 fruit and vegetables items suggests an average saving of 20% with respect to the mainstream outlets. Besides, MCA prices seemed to be less volatile during the 16-week time span, making the farmers? market an even more attractive channel for producers. In accordance with the literature on the topic, this paper confirms that the purchase drivers at the farmers? market deal with ethics and quality, despite the partially met expectations of saving. Finally, the criterion for setting a price cap generates an adverse selection among the products as well as different saving rates among customers. The aging of pork leg causes in fact a high capital requirements for a period of at least 12 months and even 18/24 months. In that case, economic analysis and financial analysis may show different results, since situations of non-financial sustainability even in case of positive profitability. The paper covers the methodology for the analysis of the profitability and sustainability of firm management and suggests specific indices to analyze the firms of the sector. The analysis show that there is a statistically significant difference between economic and financial results in the sector and the application of financial ratios proposed in the paper can better assess the sustainability of management. These ratios can find applications even in other sectors characterized by high capital absorption, particularly net working capital. (per lei, per lui, per loro) Abstract: The purpose of issue is to find an operational concept of "good food" on the basis of appraisal of 400 family food purchasing responsibles. For this purpose: Six opposite couples defining good food concept are selected. This couples are detailed in 54 items on which the appraisal has been requested to the purchasing responsibles. The items have been elaborated whit principal components methodology, for male and female segment of group, obtaining different concepts of "good food". Differences on the concept of good food are individuated also regarding age and level of instruction. 8 clusters are obtained on basis of use of media and the differences between them regarding the idea of good food are individuated. The main result is to confirm the existence of different evaluation of good food concept in different segments of interviewed group.
