The Italian agri-food system is looking for new paths towards sustainability, allowing more equitable economic structures, a re-appropriation of care and cultural values of the territory, greater attention to social issues, as required by Agenda 2030. This broad and deep system innovation, as opposed to the culture of food commodities markets, will make it possible to face the need of establishing new territorial policies. This will be possible if the system, at local scale, will be able to reconnect the many existing wires between the agri-food chains and the aims of the institutional mass catering. The new local and sustainable food systems should be designed, developed, managed, not only within administrative boundaries, but within new bioregions.
