The paper deals with the subject of the food safety structures in Poland. In the first part the community regulations as a factor determining the structures for food safety in Poland are being presented. The second part describes general questions of the public administration structures and of the law system in Poland and as well as takes into considerations more specific subjects like the regulations concerning food safety system and the relation between the national regulations and the community normative acts related to food safety structures. The third and the last part analyses thoroughly the government organs creating the food safety structures in Poland, beginning with ministers taking part in the food safety structures in Poland and passing to an analysis of the structure, the tasks and the competence of central organs of public administration and of the territorial organs of the so called administration united and not united which are appropriate for the food safety questions. In the conclusion the Author states that the actual structure of the organs re- sponsible for food safety in Poland is very complex as it is based on different criteria and formed in different periods. During the process of adjusting the polish law to the European demands the new tasks and competences concerning the food safety were assigned, due to the short period of time, to organs already existing and having other tasks and competences in different subjects. Therefore the Author claims that a reform of the food safety structure in Poland is needed.
