The transformation of the agricultural landscape is the result of many elements, such as the structural development of the territory, which in the long-term change its appearance. There are factors - like changing seasons - that act in much shorter periods. This study represents a first attempt to introduce the theme of the environment and landscape through a reading of the territory in relation to the growing season of wheat and maize. The information, collected at the level of the altimetric area and province, is taken from the Agrarian cadastre of 1929. The article proposes some observations on the main cereal crops of Italian agriculture, in relation to the surface dedicated to them, the rural population and the seasonality of agricultural work.
